A saccharimeter is an instrument for measuring the concentration of sugar solutions. This is commonly achieved using a measurement of refractive index (refractometer) or the angle of rotation of polarization of optically active sugars (polarimeter). Saccharimeters are used in food processing industries, brewing, and the distilled alcoholic drinks industry.

Conductometry

Conductometry deals with the conductivity of electro- lytes. The resistance of the solution is measured by applying an alternating voltage to the measuring cell (if direct current were applied, electrolytic processes occurring within the solution could alter the resistance).

Production of cheese and yogurt

There are six important steps in cheesemaking: acidification, coagulation, separating curds and whey, salting, shaping, and ripening. While the recipes for all cheeses vary, these steps outline the basic process of turning milk into cheese and are also used to make cheese at home. The function of the starter cultures is to ferment lactose (milk sugar) to produce lactic acid. The increase in lactic acid decreases pH and causes the milk to clot, or form the soft gel that is characteristic of yogurt. The fermentation of lactose also produces the flavor compounds that are characteristic of yogurt.

An electrophoretic system consists of two electrodes of opposite charge (anode, cathode), connected by a conducting medium called an electrolyte. The separation effect on the ionic particles results from differences in their velocity (v), which is the product of the particle's mobility (m) and the field strength (E).
